Chia pudding is a great way to get some omega-3 fatty acid into your diet. I eat this for breakfast but it would also make a great healthy treat. This recipe makes three servings so its great for anyone who meal preps. It does require you to make ahead though as the chia seeds need to expand. This is so filling that I don’t even need a pre lunch snack. If you buy chia seed pudding in the store you are looking at $5-7 for one serving and it’s just never as good as homemade . This recipe has a hint of sweetness but isn’t super plain like many store bought ones.
You will need a can or two depending on size of lite coconut milk. You can make your own coconut milk but I am not that ambitious so store bought it is. I use frozen mixed berries in mine but any type of berry would be good. For sweetness I use vanilla extract and coconut sugar but if you don’t own coconut sugar regular will work just the same. The last main ingredient is chia seeds. I buy a big bag from Costco and it has lasted me 2 years! Mix your coconut milk, fruit, vanilla and sugar in a blender until smooth then whisk in your chia seeds and evenly separate into 3 containers. I use mason jars for mine. It’s that easy!
- 2 cups of lite coconut milk
- 1 cup of mixed frozen berries
- 1/2 tsp. of vanilla
- 2 tsp. of coconut sugar
- 1/3 cup of chia seeds
- Blend coconut milk, berries, vanilla and sugar until smooth.
- Whisk in chia seeds.
- Pour the mixture into 3 containers.
- Let them sit for 12 hours in the fridge before eating.
